The Weekend Pancakes

A recipe worth making slowly.

I've been making variations and versions of these pancakes for the longest time. At least ten years of combining different recipes, trialling and testing and never able to replicate them again when I thought I'd finally found the way. Sometimes I'd nail them. Sometimes not so much. So hit and miss.

Then three weeks ago, scrolling back through old photos from a trip to Japan, I found a memory of the most memorable fluffy hotcakes. So I decided to try again. And this time, it worked. The following Sunday, I tried again. It worked again! I've made them now at least six times and they're just getting better and better.

When I shared them on stories on Sunday the response was enough that I knew I needed to write them down properly. So here they are, finally.

They are not a wellness pancake masquerading as a treat. They are just good pancakes that happen to be good for you as well. They’re so good you won’t just want them on the weekend and they definitely taste better eaten at the table than standing at the bench.

Serves 1 (double for 2 serves - although you won’t want to share) 

Ready in 20 minutes

Ingredients

1 banana

1 egg

¾ cup rolled oats

¼ cup milk (cows, almond or whatever your preference)

1 tsp baking powder for extra fluffy pancakes (you can leave it out and they still turn out great)

sprinkle cinnamon

1 tsp vanilla extract

pinch sea salt

EVOO or coconut oil for cooking

Serving suggestions

maple syrup or honey

greek yoghurt

berries

Directions

Toss all of the ingredients in a blender until well combined. Let rest for 2 minutes.

Heat a pan to medium high, once hot add oil of choice and bring the temperature down a little. Pour about 2 tbsp of batter for each pancake and cook for about 2 mins. Wait for a decent amount of bubbles to form and the pancakes to fluff up a little before flipping.

Flip the pancakes and cook on the other side. I like to put the resting pancakes in a warm oven while I make the others.

A few notes

Keep the pan clean between batches and add a little more oil if the pan is looking dry.

The secret is the rest. Don’t skip this step. It lets the oats soften and the batter thicken for a fluffier consistency.

Make sure the pan is hot before adding any oil then bring down the heat and watch it doesn’t get too hot to cook the pancakes perfectly.
