Nat’s Homemade Granola Recipe

This is by far my favourite granola recipe.

A lot of the store bought options have so much crap in them and most are really high in sugar.

This recipe is great. Super low in sugar. High in fibre. Which we love.

Word of warning - it’s addictive!

Prep time: 10 mins

Cooking time: 20 mins

Ingredients

1 cup of organic rolled oats

⅓ cup chopped walnuts

⅓ cup chopped pecans

⅓ cup chopped almonds

⅓ cup of coconut flakes (optional)

2 tsp cinnamon

2 tsp ground ginger

Good crack of Himalayan pink rock salt

1 heaped Tbsp of melted coconut oil

Good glug of maple syrup

Dash of vanilla extract (optional)


Directions

  1. Pre-heat the oven to 180°C and line a baking tray with baking paper.

  2. In a medium bowl combine the oats, chopped nuts, cinnamon, ginger and salt.

  3. Combine melted coconut oil, maple syrup and vanilla extract. Pour the coconut oil mixture over the dry ingredients, mixing well to completely coat.

  4. Spoon the mixture onto the lined tray and bake for 10 minutes.

  5. Remove from the oven, add the coconut flakes and mix on the tray. Bake for another 10 minutes or until you achieve your desired toasty goodness.

  6. Let cool and serve with fruit, greek yoghurt or coconut kefir.

The granola should store in a glass, airtight container for up to 10 days.
